Monday Meals: Bacon Wrapped Dates

I made these bacon wrapped dates for a Fourth of July party on the weekend and they were a hit. Even a non-pork-eating friend tried and loved them. These are best served warm or at room temperature, so if you make them early and store them in the fridge, warm them up in the oven before serving.

Ingredients

24 medjool dates, pit removed

8 slices bacon (thin is best)

20 toothpicks

Method

  1. Preheat oven t0 350 degrees Fahrenheit.
  2. Slice bacon in three pieces, widthwise.
  3. Wrap each date with a piece of bacon and secure with a toothpick.
  4. Place dates on a baking tray.
  5. Bake for 10 minutes, then flip dates over by the toothpicks to brown the bacon evenly. Return to the oven for another 5-10 minutes, until bacon is crispy.
  6. When crisp to your liking, remove from oven and place on a paper towel to drain fat for 5 minutes, then serve.

For extra deliciousness, try stuffing the dates with a roasted almond or goats cheese.
