Monday Meals: Meatza

Ingredients

Crust:

  • 2lb lean, grass-fed ground beef
  • 2 eggs
  • ½ small brown onion, minced
  • 2 cloves garlic, minced
  • 1 tbsp dried Italian herbs
  • Salt and pepper, to season

Suggested Toppings:

  • Tomato pizza sauce (no added sugar)
  • Fresh basil
  • Sundried tomatoes
  • Mushrooms
  • Red pepper
  • Red onion
  • Baby spinach
  • Olives
  • Cheese (optional)
  • Pesto

Method

  1. Preheat the oven to 400 degrees F.
  2. In a large bowl, add all the crust ingredients and use your hands to combine.
  3. Line a large baking tray with parchment paper. Place the meat in the middle of the tray and use your hands to flatten the meat evenly and thinly.
  4. Bake for 10-15 minutes, until cooked through. Remove from oven and drain any excess liquid from the pan. Paper towel can help.
  5. Top your pizza as you like, then return to the oven for 5 minutes until cheese is melted and toppings are hot.
  6. Serve immediately.

Tip: To test meat for seasoning and herbs, take a teaspoon of the mixture, flatten into a mini burger and cook in a frypan. Adjust seasoning as necessary.

This recipe freezes and refrigerates well, so reheat for a week of dinners or lunches.
